  1. In small bowl (yeast mixture)
  2. Mix the sugar, warm water, and yeast and let sit in a warm place for 10-15 minutes
  3. In a large bowl
  4. Sift together the flour and herbs
  5. Add the olive oil and yeast mixture
  6. Gradually add in the rest of the warm water mixing with your hands as it gets stiffer. Mix to a soft, not sticky dough, adding a little more water if neccessary
  7. Turn dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic.
  8. Put the dough back in the bowl, oil lightly and cover loosely with a towel. Put it in a warm place for 30-40 minutes. (Turn oven to “warm” for 2 min. Turn OFF, put dough in)
  9. Knead again until smooth and elastic, then cut into three pieces. Shape each into an oval loaf and arrange on an oiled baking sheet. Slash the top of each loaf. Loosely cover, and put in a warm place for 15-20 minutes.
  10. Preheat oven to 425. Brush loaves with olive oil and sprinkle with salt and herbs.
  11. Bake for about 25 min until golden brown. Let cool on wire rack.
